Boot's Goldrush Brownies

2 cups of crushed graham cracker crumbs

6 oz. of chocolate chips

1/2 cup of nuts (optional)

1 can of condensed milk

confection sugar

 

Preheat oven to 350 degrees.  Mix crackers, chips, and nuts (op.).  Blend in milk.  Pour into greased pan (Boots tip:  Grease pan with Pam it is easier to get the brownies out after they are done).  Bake until top is golden brown (about 40 min.)  Sprinkle with confection sugar.

 

Pablo's Cheese Enchiladas

1 pint sour cream

1/2 tsp. cumin

1 cup of chopped green onions

olives

1 lb. shredded cheddar cheese

12 10 oz hot enchilada sauce

12 corn tortillas

 

Mix sour cream, onions, olives, and 1 cup of cheese.  Heat 1 can of sauce.  Put filling into tortillas and fold.  Place in pan.  Cover tortillas with remaining sauce and cheese.  Makes 2 layers.  Bake at 375 degrees for 20 minutes.

Need to get this recipe again...it's so messed up it scares me.

 

Broccoli Bake

 

1 bag of frozen broccoli

1 bag of shredded cheddar cheese

Corn flakes

1 package of Lois Rich's shredded chicken

1/4 cup of milk

 

Cook broccoli, mix with cheese, milk, and chicken.  Sprinkle corn flakes on top, bake at 350 degrees for 20 minutes.
